Menu planning with no time and little money

We volunteered to work on some bike trails this weekend and now we are both in some serious pain!  I think we over-estimated how much we could take on!

So what do you do when you still have to stay on budget, go to the store and eat right?  We’ll hit the grocery store after church and pick up a chicken to roast, some sweet potatoes (my nutritious, filling, cheap go-to-food) and some produce.  I always have brown rice and quinoa in the pantry.  We’ll be good to go for two days until we can recover and I can make some proper menus.

Shopping the perimeter of the store and keeping your regular staples in mind will help you grab what you need.  Get the cash you allow for groceries for the week and stick to it.  It’s better to make menus and a list but you can still eat right on a budget when you just have to grab and go.
