Weekly Menus

I have $100 and not much in the fridge .. I have black beans in the freezer and a frozen chicken back to use to make chicken stock. I’ll cook the beans in the stock for a crockpot meal one day next week. We are out of eggs but have brown rice, steel cut oats and whole wheat berries.

roast chicken with potatoes and carrots homemade bread

bbq chicken quarters, corn bread, slaw, corn

taco salad

Kung Pao chicken with veggies and brown rice

chicken grilled with hot pepper jelly and pineapple, steamed broccoli, brown rice

black beans, corn bread, greens

grilled salmon, grilled sweet potatoes, salad, homemade whole wheat rolls

When I make menus, I make sure that we have cereal, eggs, rice milk and bread for the coming week. That covers breakfast for us. Lunches are tricky for us because both of us have to travel around several counties in our local area on our jobs. We use protein shakes, protein bars, salads from fast food places and sometimes bring our lunch in a Bento box if there are any good leftovers from a meal.) I try to keep tuna in the pantry in case one of us gets a chance to run home for lunch and there is always bread.) Anyway all that to explain that I buy what we need for a week’s worth of dinners plus food for breakfasts and some lunch staples.

Okay – I’m to make a list and go to the store … I’ll post grocery receipts when I get back.
